Did you see Chef Scott on the Suncoast View yesterday? He was making a delicious Sea Bass and Blackberry-Sage Gastrique salad.
Chef Scott explains, “A Gastrique is a very simple french sauce. We’re gonna put sugar, blackberries, the sage, and then the vinegar. Then, let it reduce. We’re gonna put the fennel on the mandolin and shave it down. Let’s zest the orange and lemon and add it to the shallots and fennel.”
